Kimchi is a traditional banchan (side dish) that consists of salted and/or fermented vegetables. Nappa cabbage kimchi is the most popular variant and what many koreans would think of when ordering “Kimchi”, making it the quintessential banchan and kimchi.
Soora’s nappa cabbage kimchi is routinely made fresh, so the initial taste is salty, spicy and a bit sweet. If you’d prefer a more authentic taste, then you can leave it sealed or in a different container, to ferment it. The fermentation process will make it sour, making it a perfect base for soups, stews and stir-fries.
